Not as bad as it sounds
Not since the death of Sack-N-Save’s three chili dogs for $1.50 have students been able to get full for so little scratch.
This fast and easy recipe will feed four-to-six for around five bucks and makes for some very filling comfort food especially in the fall and winter seasons all for around five bucks!
What you will need:
- a spatula
- a 9 x 11 baking pan
- an oven
- one box of Jiffy corn muffin mix
- one lb of ground 80/20 beef
- Pam nonstick spray or butter
- 1/3 cup of milk
- one egg
- taco seasoning (optional)
- black olives (optional)
- pinto beans (optional)
- shredded cheddar cheese (optional)
- one regular size dinner bowl
- a skillet
- a fork for mixing
- salt and pepper
- Preheat oven to 400 degrees
- Brown ground beef on medium high heat stirring occasionally (about five minutes)
- Pour off excess grease
- Salt and pepper beef to taste
- If using optional ingredients add all except cheese now and follow directions on taco seasoning package
- In bowl, empty contents of corn muffin mix and add milk and egg and beat lightly with a fork (there will be some clumps don’t over mix) until the consistency of pancake batter
- Spray the bottom and sides of the baking pan coating lightly with the Pam nonstick spray (tip: use butter flavored spray for best results)
- Spoon in meat mixture until it covers the bottom of the baking dish
- Spoon in corn muffin mix over the top of the meat using the fork to smooth it over until it covers all of the meat
- Put it in the oven and allow to bake for 25 minutes
- If using the optional shredded cheddar, sprinkle over the top of the corn muffin mix and cook for an additional five minutes
- Allow to cool for five minutes and serve warm
I use this recipe whenever I have company over for a quick meal on a busy day and always get great reviews and clean plates! This recipe is perfect for dinner on a schedule or for dinner on a budget. Enjoy!
Tip: This recipe works even better with mild to spicy chili in place of the meat mixture. Just follow the recipe exactly replacing the meat with chili. Perfect for a cold winter day!
This recipe is also incredibly versatile and makes a great base recipe to build off of. You can add anything you can think of from mushrooms to bacon bits to veggies like frozen corn or green beans. Use your imagination! It also works just as good as a stand-alone though if a budget is an issue! It also holds up great as leftovers if you don’t have a crowd over to help demo it!
